I have a 2001 dodge dakota slt 4x4. The rear axel has NO gear oil in it. How much should I add?

Also, the pumpkin looking part of the rear axel has a rubber plug that allows you to open it up and pour gear oil inside.

yes, you fill it up until it runs out of the plug.
If there's no sign of a leak, where did the oil go? Fill the differential and wait for the level to overflow the hole.
